Ok, so today's recipe is 5 Minute Fudge. It's a staple in my house over the holidays and my mother made it every year. Over the year I've made it with different flavoured chips (add another 1/4 cup if you do), white chips, peanut butter chips, added peppermint flavour instead of vanilla... it's all good!
What you need:
2/3 cup Evaporated Milk
2 cups mini marshmallows
1 1/2 cups semi-sweet chocolate chips
1 2/3 cups white sugar
2 tbsp butter
1 tsp vanilla
1/2 cup nuts (optional)... or use crushed candy cane pieces if going peppermint... you know...
What you do:
Place foil in an 8" x 8" cake pan and squish into corners. Set aside.
In a medium pan on medium heat, mix sugar, butter, and milk til dissolved. Keep stirring constantly until mixture comes to a boil. Then boil for 5 minutes - stirring all the time! Remove from heat and add the vanilla, marshmallows, and chips. Stir until marshmallows have melted into the mixture completely. Add nuts at the end. Pour the whole thing (it will be thick and you'll get a really good work out) into the pan. Even it out and place in the fridge for at least an hour. Cut into 1" pieces - it's super rich so that's about all anyone needs in one sitting.
