Today's recipe is Sugar Pie. It's similar to the butter tarts, but this is true Tarte au Sucre from Quebec, so expect your teeth to hurt after a bite! This recipe makes 60 tarts or 4 pies, or 30 tarts and 2 pies.
What you need:
60 tart shells OR 4 pie shells, OR a combination of the two (again, I just buy mine and it works fine)
1 kg bag brown sugar
2 Eggs, beaten
2 tbsp Butter, melted
2 cans evaporated milk
4 tbsp flour
Pecans (turns it into a pecan pie)
What you do:
Preheat your oven to 350 degrees.
In a big metal bowl, stir everything together with a whisk until the flour is incorporated and there are no lumpy parts.and then evenly distribute the batter in the shells to about 2/3 full. They bubble up, so you don't want to overfill or you lose the gooey goodness inside. Put into the oven for around 30-45 minutes and a knife stuck in the middle comes out clean. Once they're done, pull them out and let cool before eating because they will continue cooking for another 5 minutes or so while they cool.
