First one - butter tarts. These butter tarts won the 1st place ribbon at a local fair, so they're pretty good. This recipe makes 12-14 tarts and doubles easily.
What you need:
12-24 tart shells (I suck at making pastry, so I buy mine. It works, people love it, and so I don't care)
1 cup Packed brown sugar
1 Egg, beaten
1/3 cup Butter, melted (makes a difference, totally)
2 tbsp milk
1 tsp vanilla
Raisins (I use Craisins. Soooo nice)
What you do:
Preheat your oven to 375 degrees.
In a big metal bowl, stir the melted butter and sugar together, then add everything except for the raisins together. Stir quickly because you don't want the egg to cook in the hot butter. Put 4-6 raisins in the bottom of each tart shell and then evenly distribute the batter in the shells to about 2/3 full. They bubble up, so you don't want to overfill or you lose the gooey goodness inside. Put into the oven for around 15 minutes, and then check them. Depending on your preference - gooey or more solid - they might need a bit more time (another 5 or so). Once they're done, pull them out and let cool before eating because they will continue cooking for another 5 minutes or so while they cool.
